Dinner last night

Last night was a fridge clean out and I made a delicious vegetable bake which is great for using up any ageing vegies! I layered leek, eggplant, tomato and pumpkin in a dish with basil and garlic and baked it in the oven, covered with foil, at about 170C for around 90 minutes. It was really delicious and would work with anything you had in the fridge, mushrooms, zucchini, onion, potato… you could use a can of tomatoes, any types of herbs you liked, add cheese… be creative!
